Pozole

  • 10 reg. cut pork chops, add salt, pepper & flour
  • 4 tbsp. bacon drippings
  • 2 med. onions, chopped
  • 1 clove garlic, diced
  • 5 tbsp. fresh cilantro, chopped
  • 2 fresh tomatoes, cubed
  • 2 Serrano peppers, sliced
  • 5 c. chicken broth
  • 1 can tomatoes, stewed
  • 1 can hominy
  • Green onions & lime


Directions
Cube pork chops. Discard bone and fat. Salt, pepper and flour cubes of pork. Brown in hot bacon drippings.

Add onion, garlic, cilantro, peppers and fresh tomato after meat is slightly browned.

Add broth, stir and cover; allow to simmer for one hour. Add the canned tomatoes and hominy.

Cover and simmer for another 30 minutes.

Serve with a few chopped green onions floating on the top. Lime juice may be squeezed on top to prevent grease from forming.
